Thanks to quick search on Pinterest, I stumbled across this pin from Shannon over at Just as Delish on how to make two ingredient gluten free pancakes.
I have been adjusting my diet to include more simple recipes like this and decided to give it a go. You have no idea how hard it was to say NO to my husbands homemade sausage egg and cheese biscuits.
The only thing I added to this recipe was 2 tablespoons of flaxseed and could see adding other things like cinnamon or nutmeg. Heck, I have even wondered whether or not adding a little oatmeal to the mix would be too much.
Truth be told, my pancakes fell apart on me. Now Shannon warned this may happen. I even considered adding a tablespoon of rice flour or cornstarch as a binding agent after the first pancake but didn’t. Before I go adding anything to this recipe I think I’ll give it another try as is only pureed next time. This may give me a smoother, batter like consistency that doesn’t break apart when I flip them. *fingers crossed*
